Tofu Stuffed Long Beans

I always see long beans and struggle to find something fun to do with them apart from stir frying. Here I've substituted the classic prawn and pork filling for tofu and mushrooms.


Ingredients

  • 1 bunch of long beans

  • 1 block pressed tofu

  • 1 tbsp ground flaxseed

  • 4-6 pcs fresh shiitake mushrooms, minced

  • Soy milk

  • Olive oil

  • Soya sauce or tamari

  • 1 tbsp chili oil

  • Spring onions, chopped


Instructions

  1. Blanche the long beans for 30 seconds in boiling water and then place in ice water

  2. Mix together the tofu, flaxseed, mushrooms and soy milk until mixture holds together

  3. Wind the long beans into circles and tuck in the ends

  4. Place the mixture into the center of the long beans and pack tightly

  5. Heat olive oil to medium heat and fry both sides of the long beans until golden

  6. Remove long beans from the pan

  7. Add chilli oil and soy sauce to the pan and return long beans to the pan to heat through

  8. Garnish with spring onions
